Serving and pairing suggestions
Dow's Ruby is bottled ready to drink after an average three years of cask aging. It has a t-cap closure, which means that you don't need a corkscrew to open it and that it will stay fresh for four to six months if stored in a cool, dark place or refrigerator. Serve it in a glass with at least a six ounce capacity so that you may appreciate the wine's aromas. Dow's Ruby is delicious with creamy blue cheeses or dark chocolate
In 1944, Chateau Souverain founder J. Leland "Lee" Stewart harvested his first crop of wine grapes from his Howell Mountain property in Napa Valley. From the next vintage, he produced his own wines, surprising many by winning silver medals at the California State Fair for his Zinfandel and Pinot Noir. In the years that followed, Stewart used innovation and a natural gift for winemaking to establish Souverain as one of the great California wine brands. While the names, faces and location of the winery have changed, the tradition of fine-wine production continues at Chateau Souverain today

As soon as Pascual Toso arrived in Argentina, he settled in Mendoza and started working in an import business. Very soon, however, he came to appreciate the exceptional quality of the grapes in the region and firmly believed that there was a promising future for winemaking in Mendoza. As he had been involved closely with the development of his family wine business in Piamonte, he decided to do the same in Mendoza. In 1890, Pascual Toso established his first winery in San José, Guaymallén.
At the beginning of the twentieth century, our founder decided to expand the business and acquired vineyards in Maipú, which he correctly believed contained the best quality grapes in the region. At his estate "Las Barrancas", he built another winery. Today, the Maipú area is considered by technicians to be the prime wine-producing area not only in the region of Mendoza, but throughout Argentina.
The Santa Ema Reserve wines have been called by some "The majic wines" of Chili.
In the central valley of Chile, a country with a long-standing tradition of fine wines, noble European stocks have found fertile ground and an ideal climate that has resulted in production which is good as, or even better, that in their country of origin.
In 1917, Pedro Pavone Voglino, the son of an Italian winemaker, immigrated from the Italian Piedmont-a region famous for its white Muscat and red wines, especially Merlot– to settle in Chile.
Mr. Pavone planted his first vineyards in the Maipo Valley in 1931; four years later, he harvested his first Cabernet, Merlot and Sauvignon Blanc grapes. Over the next years, he sold his grapes to large local wineries until-together with son Felix Pavone Arbea-he decided to found his own winery, known today as Santa Ema. Since its creation in 1955, Santa Ema has been exclusively managed by the Pavones in a traditional family style.
In the early years, Pedro Pavone headed the company along with sons Felix, Bruno, and Pedro Jr., who were in charge of vineyard management and production.
The company grew steadily as wine cellars and production, bottling and storage facilities were erected. This allowed the company not only to gain a foothold in the local and international market, but also to compete with the best and largest wineries in Chile.
Santa Ema offers premium quality wines due to the combined effect of optimum raw materials and cutting-edge technology.
The best European strains found fertile soil and a benign climate in the Central Valley of Chile-a country with a long wine-making tradition-where they flourished as well as, if not better than they did in their native countries.
Santa Ema wines are the product of privileged soils in the Maipo and Cachapoal valleys. Benefiting from the extraordinary particular conditions of its vineyards, the winery has placed special emphasis in incorporating geared to the production of top quality wines.
This special care and concern has widely opened the doors of domestic and international markets for Santa Ema.
The winery runs a steady production of white and red varieties, and its management system has always aimed toward compliance of quality standards rather than sheer quantity.
Implementation of espalier leads, with intensive pruning, clearing, thinning, fertilization, controlled irrigation, and fine-tuned exposure to sunlight have all contributed to an optimum grape quality.
A magnificent vineyard and state-of-the-art technology place Santa Ema on the top rungs of the quality scale. Santa Ema is a shining example of how the implementation of technological criteria in wine production can result in major success in the production of premium wines. Santa Ema uses French oak barrels to age its Reserve wines.
Santa Ema recently started running a thermally-insulated cellar to enhance the aging process for its bottled wines, under proper temperature and humidity conditions for the precise resting time established for each variety.
The winery also runs a modern facility that meets all health and operational requirements necessary for bottling top quality products on a brand new line.

Bodega Norton
Bodega Norton was founded by Edmund James Palmer Norton, an English engineer, in 1895. Brought to Argentina to work on the railroad projects for Buenos Aires al Pacifico, he fell in love with a young woman from the country and at the same time, with Mendoza. Norton bought an estate and land in Perdriel, Lujan de Cuyo and planted vines, and a winery soon followed, which was the first winery in Argentina south of the Mendoza River.
At Norton Winery, we are convinced that wine is born in the vineyard, that is the reason why, the experience and professionalism of our agriculturist engineer and enologist combine in our wines, jointly with the knowledge of our people and their hand-craft spirit, together with state-of-the-art technology.

Lo Tengo
From time memorial, those who know about wines have not hesitated to call Luján de Cuyo city in Mendoza province as “The First Zone” given the fact that it is located in a privileged spot for high quality wines production. The point is that this region has an average height of 900 m above sea level, it has a rocky soil of alluvial origin which is not deep, with a watering system of crystal water resulting from the Andes melt waters, one of the world´s highest luminosity rates with over 250 sunny days a year, little rains and a mild climate with big temperature differences between day and night. All these elements come together to provide an excellent fruit ripening and concentration, developing colors, aromas, flavors and textures in an ideal manner, thereby yielding balanced wines of highlighted and particular characteristics, with deep colors, fruity aromas and intense flavors.

We work very hard in the vineyards to produce grapes that will need very little intervention in the winery. We want our wines to be balanced, complex and concentrated. We want them to show a sense of place, of the land that gave them birth.
The road to this goal is very low yields. Our Quimera blend has an average yield of 18 hectoliters per hectare. The Finca Altamira single-vineyard Malbec has a yield of 12 hectoliters per hectare.
We strive for aerated, sun-drenched canopies and for small bunches of very small grapes. When the location of a vineyard has been chosen with care and a plant has such low yields, the root system can create complexity and concentrate flavors and aromas in a natural way. Also the physiological maturity (tannin maturity) of the grapes will be in synch with their sugar development.
We harvest only until mid-morning for the grapes to be very cool when they arrive in the winery. We do severe triage both on the grape bunches before desteming and on the grapes themselves after desteming, to assure that only the best go into our tanks.

Crescendo
In the early 1900s, Napa Main Street rivaled that of many larger cities. Saloons and gambling emporiums were numerous, but culture had also made its debut. There was a library and reading room, an agricultural society and an opera house that would inadvertently become home to one of the first “tasting rooms” in Napa Valley.
In January of 1920, Prohibition was passed through the 18th Amendment. Even though the sale of alcohol was illegal, alcoholic drinks were still widely available at "speakeasies" and other underground drinking establishments. A few farmers were allowed to continue grape-growing to supply the wineries permitted to make sacramental wine during this teetotaler era, however. Though scarce, grapes could be had for a price.
As the story goes, a speakeasy was opened in the basement of the Napa City opera house. The unofficial name of this operation was Crescendo, named after the singing technique made famous by opera singer Gioacchino Rossini.
Crescendo was one of the few speakeasies in Napa Valley and was known for serving only wines from underground wineries down the road from what would later be known as the Oak Knoll area. More than simply a watering hole, it was a gathering place to maintain community, keep tradition and the area’s rich bounty alive.
In 1930, after ten years of operation, Crescendo was raided by Federal Agents and records were purged. Many consider this an historic site and legend has it that Crescendo served as one of the area’s first “tasting rooms”.
We present this ultra-premium wine in dedication to the rich history of Napa Valley and the opera house that kept the wine flowing during Prohibition.

L'Aventure
Stephan Asseo has been a dedicated vigneron and artisan winemaker for nearly two decades. His unique style and level of quality garners acclaim and accolades from the European press, travel guides, the Wine Advocate and the Wine Spectator. In 1996, Stephan left France in search of a terroir where he could consistently achieve full maturity in his fruit and be unfettered as an innovator. Stephan’s “adventure” led him all over the world in search of a great wine field, until he finally “fell in love” with Paso Robles. He has become known for his renegade Cabernet Sauvignon and Syrah blends, like the Optimus and the Estate Cuvee.
Paso Robles: East vs. West We immediately favored the west side of Paso Robles for its sloping hills and authentic quality terroir. Another factor for this decision was the proximity of the Templeton Gap, a breach in the Coastal Range through which cool breezes blow continuously. The area is characterized by early fog in the morning, warm clear days, and nighttime temperatures that can drop by approximately 40 degrees. ??The site, which was not planted, was selected after an extensive study of the area that matched with our long experience in the wine industry. The property covers a total of 127 acres and has many hills of various elevations, complex soils, and excellent drainage. ??
Opolo 
Opolo Vineyards is located on a beautiful 70-acre mountain site, west of Paso Robles. Here, the poor mountain soils, high daytime temperatures and cool nighttime temperatures combine to yield intense grapes that are the necessary ingredients to produce fine wines. At Opolo, all of our wines are estate grown, produced and bottled, and production is typically less than 500 cases per varietal. Our specialties include big mountain Zinfandels, classic Zinfandels, full bodies Pinot Noirs, Merlots, and Syrahs, as well as an 'easy going' Sangiovese. We also have other great varietals, including Chardonnay, Cabernet Sauvignon, Cabernet Franc, and a delightfully sweet and fragrant Muscat Canelli. ??

The company began as a vineyard in 1980, then in 1995 the decision to develop a winery was taken. In the first year the grape intake was 3,000 tonne. This has increased each year to crushing 16,250 tonne in 2003.
The business consists of Andrew, Cathryn and Andrews parents, Jim and Pam. The Peace family’s achievements in creating a commercially successful vineyard/winery business in recent years have been little short of amazing demonstrating a strong capacity to utilize technology, with enormous hard work and exceptional planning skills. This continues today as the business expands with a growing export market, and the wine released on the Australian domestic market.

Not every terroir fits into another, but with patience and consistency, almost like a zealot in a sect, Cipresso has now found a way to pursue his philosophy. As part of his discoveries, two other wines emerged; Pigreco and Eureka. Formed from discoveries along the way, a red blend and single vineyard bottling, respectively, are also products of his experiments. His goal for each vintage of Quadratura del Cerchio is to continue to combine compatible terriors wherever they are- Sicily + Piedmont, Tuscany + Puglia….the options are endless, as long as they blend together to form the solution of the problem…..La Quadratura del Cerchio. By experimenting and blending form year to year, the exciting wines of Roberto Cipresso are a platform for uninhibited winemaking, the passion of Roberto Cipresso.

Pinino wine estate was founded in 1874 in the famous part of Montalcino, Montosoli and Pinino wines were always regarded as one of the best Brunellos in Montalcino. In 2003, the property was purchased by Andrea and Hannes Gamon of Austria together with Silvia and Max Hernandez of Spain with the vision to produce 1st class wines, derived from a common passion.
